I honestly think that NFS MOST WANTED is the best but my personal choice has always been NFS UNDERCOVER which you haven't mentioned but real Pro racer would say NEED FOR SPEED SHIFT.

I always liked underground, but Shift is the best real racing sim. However, Dirt 2, and Forza 3 are better than any of the nfs series IMHO
